In a mixing bowl, crack 2 eggs. Add 200g of cream cheese, 100g of sliced mushrooms, 50g of diced ham, and 20g of diced pickles. Season with salt and pepper to taste. Mix all the ingredients thoroughly until well combined.

Unroll the rectangular puff pastry sheet onto a work surface. Place a small round object, such as a bowl or a cutter, in the center of the pastry sheet and press down lightly to create a visible circular indentation without cutting through the pastry.

Using a knife, make 8 cuts from the edge of the marked inner circle outwards towards the corners and the midpoints of each side of the rectangular pastry. Ensure these cuts stop at the edge of the inner circle and do not cut into it.

Spoon the prepared egg and cream cheese mixture evenly into the central circular area of the puff pastry. Take one of the cut triangular pastry strips and fold it over the filling towards the center. Take the opposite triangular strip and fold it over the first one, overlapping slightly, towards the center. Continue this process, folding each pastry strip over the filling in an overlapping manner, until the entire filling is covered and a braided or woven pattern is formed on top. Gently press down the ends of the pastry strips to secure the filling.

In a small bowl, whisk together 1 egg yolk with 1 tablespoon of milk to create an egg wash. Brush the entire surface of the assembled pastry with the egg wash.

Preheat your oven to 180°C. Place the pastry in the preheated oven and bake for 20 minutes, or until the pastry is golden brown and puffed.

Remove the baked pastry from the oven. Allow it to cool slightly before slicing and serving.
