Preheat your oven to 375°F (190°C). Prepare your Cheddar Bay Biscuits according to package instructions or your preferred homemade recipe, but do not bake them yet. Set aside.

In a large saucepan or Dutch oven, melt the 1 stick of butter over medium heat. Once melted, add the 1/2 cup of all-purpose flour. Whisk continuously for 2-3 minutes until a smooth roux forms and it's lightly browned, ensuring no lumps.

Gradually whisk in the 1 tablespoon of Old Bay seasoning, 1/2 cup of heavy cream, and 2 cups of chicken stock. Continue whisking until the mixture is smooth and begins to thicken, about 3-5 minutes.

Reduce the heat to low. Add the 8-ounce block of cream cheese, 1 teaspoon of salt, and 1/2 teaspoon of freshly ground black pepper to the sauce. Whisk until the cream cheese is fully melted and incorporated, resulting in a smooth and creamy sauce.

Gently stir in the 1 pound of cooked, chopped lobster meat until it is well combined with the creamy sauce. Remove the saucepan from the heat.

Pour the hot lobster mixture evenly into a 9-inch pie dish or similar oven-safe baking dish. Arrange the unbaked Cheddar Bay Biscuits on top of the lobster mixture, covering the entire surface.

Place the pot pie in the preheated oven and bake for 20 minutes, or until the biscuits are golden brown and the filling is bubbly. Keep an eye on the biscuits to prevent over-browning.

Carefully remove the lobster pot pie from the oven. Let it rest for a few minutes before serving hot.
