Preheat your oven to 400°F (200°C). Place a wire rack over a baking sheet and set aside.

Place the chicken pieces (drumsticks and/or thighs) into a large bowl.

Add the 2 packs of Sazon seasoning and 1/2 teaspoon of black pepper to the chicken. Thoroughly mix the seasonings into the chicken pieces by hand until evenly coated.

In a separate medium bowl, crack the 2 large eggs. Add 1 tablespoon of hot sauce to the eggs. Whisk the eggs and hot sauce together until well combined, forming an egg wash.

Set up your breading station: Arrange three bowls in a line. The first bowl should contain the seasoned chicken, the second bowl the egg wash, and the third bowl the Louisiana Spicy Chicken Fry mix.

Take one piece of seasoned chicken from the first bowl. Dip it entirely into the egg wash, ensuring it is fully coated. Transfer the egg-washed chicken to the bowl with the Louisiana Spicy Chicken Fry mix. Generously coat the chicken piece with the fry mix, ensuring all sides are covered. Place the breaded chicken piece onto the prepared wire rack over the baking sheet.

Repeat the breading process for all remaining chicken pieces, placing each breaded piece on the wire rack, ensuring they are not touching.

Once all chicken pieces are breaded and arranged on the rack, spray them generously with vegetable oil spray.
Bake the chicken in the preheated oven at 400°F for 30 minutes.

After 30 minutes, carefully flip each piece of chicken. Continue baking for an additional 20 minutes at 400°F, or until golden brown and cooked through.

Once baked, remove the chicken from the oven. Squeeze fresh lemon juice over the cooked chicken pieces before serving.
