Wash the apples thoroughly. Using an apple corer or a small knife, carefully remove the core from each apple. Slice the cored apples into 1/2-inch thick rounds. Gently insert a wooden popsicle stick into the bottom of each apple slice, creating an 'apple pop'.

Lay the apple pops on a piece of parchment paper or a silicone mat. Spread a generous layer of creamy peanut butter evenly over one side of each apple slice.

Place the chopped dark chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely melted and smooth. Alternatively, melt using a double boiler.

Carefully drizzle or spread the melted dark chocolate over the peanut butter layer on each apple pop. Ensure the chocolate covers the peanut butter well.

While the chocolate is still wet, generously sprinkle the granola over the chocolate layer. Gently press the granola into the chocolate to help it adhere.

Transfer the apple pops to a plate or baking sheet lined with parchment paper. Place them in the refrigerator for at least 10 minutes, or until the chocolate has set. Serve chilled and enjoy!
