To make the dough, whisk together the flour, sugar, and salt in a large bowl. Cut in the cold diced butter and cold shortening using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Add the cold vodka to the flour mixture, then gradually add 1/4 to 1/3 cup of ice water, a tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix. Carefully remove the parchment paper and pie weights. Continue to bake the crust for another 5-8 minutes (metal pan) or 8-12 minutes (glass pan) until the bottom is lightly golden brown. Remove from oven and set aside.

While the crust is par-baking, prepare the filling. In a medium saucepan, whisk together the sugar, cornstarch, and salt. Slowly whisk in the heavy cream and whole milk until smooth.

Cook the filling mixture over medium heat, whisking constantly, until it begins to thicken. This should take about 5-7 minutes. Once thickened, remove the saucepan from the heat and stir in the butter and vanilla extract until fully incorporated.

Pour the hot filling into the par-baked pie crust. If desired, dust the top of the pie with a sprinkle of cinnamon and nutmeg.

Bake the pie in the preheated 375°F (190°C) oven for 8-10 minutes, or until the filling is set and lightly golden on top.

Allow the pie to cool completely at room temperature, then refrigerate for at least 4 hours, or preferably overnight, to allow the filling to fully set before slicing and serving.
