Preheat your oven to 200°C / 400°F on the grill/broil setting. Line a baking tray with parchment paper.

Carefully cut each corn cob lengthwise into 12 pieces. You may need to stand the corn on its end and use a sharp, sturdy knife, cutting down through the center, then quartering, and then cutting each quarter into three pieces. Be cautious as this can be tricky.

Place the cut corn pieces into a pot of boiling water. Boil until the corn is tender, about 5 minutes.

While the corn is boiling, prepare the seasoning sauce. In a small bowl, combine the 1/4 cup olive oil, 1 teaspoon paprika, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon ground cumin, and a pinch of salt. Mix well until all ingredients are thoroughly combined.

Once the corn is tender, drain it well. Arrange the cooked corn pieces in a single layer on the prepared baking tray.

Brush the prepared seasoning sauce generously over all sides of the corn pieces, ensuring they are well coated.

Bake in the preheated oven for about 20 minutes, or until the corn ribs are golden brown and slightly crispy. Keep an eye on them to prevent burning, especially under the broiler setting.

Carefully transfer the hot corn ribs to a serving plate. Immediately top with grated Parmesan cheese, chopped fresh parsley, and freshly ground black pepper.

Drizzle with truffle-infused olive oil, if desired. Serve hot with your favorite dipping sauce, such as a ketchup and mayonnaise dip.
