In a large mixing bowl, combine the glutinous rice flour, sugar, milk, and egg. Whisk these ingredients together until just combined.

Add the melted unsalted butter to the batter. This will contribute to the crispiness of the rice cakes. Continue to whisk until the butter is fully incorporated.

If desired, add the vanilla extract for flavor and the salt to balance the sweetness. Whisk the batter again until it is smooth and free of lumps.

Take your softened butter and thoroughly grease your chosen mold. This could be a chestnut mold, a cupcake tin, or another oven-safe mold. Ensure all surfaces that will come into contact with the batter are well-greased to prevent sticking.

Carefully pour the prepared batter into the greased mold, filling each cavity to an appropriate level (usually about 3/4 full for cupcake tins).
