In a small bowl, combine 2 tablespoons of olive oil, 1 tablespoon of Flora & Mana Dry Jerk Seasoning, 1 teaspoon of sweet dark soy sauce, and salt to taste. Mix well to create the dry rub marinade.

Generously rub the prepared marinade onto both the lamb chops and salmon fillets. Set aside while you prepare the sauce.

In a small saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and grated fresh ginger and sauté for about 30 seconds until fragrant.

Stir in 1 tablespoon of soy sauce, 1 teaspoon of sweet dark soy sauce, 2 tablespoons of Walkerswood Wet Jerk Seasoning, 3 tablespoons of honey, and the juice of 1/2 lemon. Bring the mixture to a gentle simmer.

Continue to simmer the sauce, stirring occasionally, until it thickens slightly. If the sauce is too thick, add 1 to 2 tablespoons of water to reach your desired consistency. Remove from heat.

Heat a large pan over medium-high heat. Once hot, add the salmon fillets, skin-side down if applicable. Sear for 3 to 4 minutes per side, or until cooked through and flaky. During the last minute of cooking, spoon some of the prepared Honey Jerk Butter Sauce over the salmon.

In a separate pan (or clean the first pan), heat over medium-high heat. Add the marinated lamb chops and sear for 3 to 4 minutes per side for medium-rare, or longer for desired doneness. During the last minute of cooking, spoon some of the Honey Jerk Butter Sauce over the lamb chops.

Carefully plate the cooked salmon fillets and lamb chops. Drizzle generously with any remaining Honey Jerk Butter Sauce. Serve immediately with your favorite side dishes.
