In a large bowl, combine the cut chicken breast with yogurt, salt, red chili powder, chili flakes, black pepper, minced garlic, and optional tomato puree. Mix well to ensure the chicken is evenly coated.

Heat 1 tablespoon of cooking oil in a large pan or skillet over medium heat. Add the seasoned chicken to the pan. Cover and cook for 15-20 minutes, stirring occasionally, until the chicken is fully cooked through and tender. Remove from heat and set aside.

While the chicken is cooking, prepare the sandwich sauce. In a small bowl, whisk together mayonnaise, ketchup, chopped fresh cilantro, paprika, and fresh lemon juice until smooth and well combined.

To assemble each sandwich, take three slices of bread. Spread a generous amount of the prepared sauce on one side of each bread slice.

Place one sauced bread slice on a clean surface. Layer with a portion of the cooked chicken.

Place a second sauced bread slice on top of the chicken. Layer with your chosen vegetables and one slice of cheddar cheese.

Top with the third sauced bread slice, completing the sandwich.

Spread softened butter on the outside of the top and bottom bread slices of the assembled sandwich. Heat a clean pan or skillet over medium heat. Place the buttered sandwich in the pan and toast for 3-5 minutes per side, or until golden brown and perfectly crisp.

Repeat steps 4-8 for the remaining sandwiches. Serve the crispy, saucy chicken sandwiches immediately with a side of fries and enjoy!
