Bring a large pot of water to a rolling boil. Add the fresh wide rice noodles and cook for 1-2 minutes until tender but still slightly firm (al dente). If using dried noodles, follow package instructions for cooking. Drain the noodles thoroughly and set aside.

While the noodles are cooking, finely chop the green onions for garnish and set aside.

Heat 2 tablespoons of cooking oil in a large wok or skillet over medium-high heat until shimmering. Add the chili paste or chili oil and stir-fry for about 30 seconds until fragrant.

Add the minced pork or chicken to the pan. Break it up with a spoon and stir-fry until it is cooked through and lightly browned, about 5-7 minutes.

Pour in the chicken broth (or water), oyster sauce, soy sauce, fish sauce, and sugar. Stir well to combine and bring the mixture to a simmer.

Add the Chinese broccoli or bok choy to the pan and stir-fry for 2-3 minutes until the vegetables are slightly wilted but still retain some crispness.

Add the cooked and drained noodles to the pan with the meat and vegetable mixture. Using tongs or two spatulas, toss and stir all the ingredients together thoroughly until the noodles are well coated with the sauce and heated through, about 2-3 minutes.

Transfer the Thai mixed noodles to individual serving bowls. Garnish generously with the finely chopped green onions and a sprinkle of fried shallots or fried garlic before serving immediately.
