Clean the 1 kg mud crab thoroughly. Remove the gills and any internal organs. Using a cleaver or heavy knife, crack the claws and body into manageable pieces.

Heat 2 tablespoons cooking oil in a large wok over medium-high heat. Add the 1 large chopped onion and sauté for approximately 3 minutes until it has softened and become translucent.

Introduce the 5 cloves minced garlic and 2-inch grated ginger to the wok. Continue to sauté for another 1-2 minutes until the aromatics are fragrant.

Add the 3-4 sliced red chilies (or to taste) to the wok and stir-fry for about 30 seconds. Pour in 1/2 cup tomato sauce and 1/4 cup chili sauce. Mix all ingredients well to combine.

Add 2 tablespoons sugar, 1 teaspoon salt, and 1/2 teaspoon white pepper to the sauce. Stir thoroughly until the seasonings are fully incorporated.

Place the prepared crab pieces into the wok. Stir well to ensure all crab pieces are evenly coated with the rich chili sauce.

Pour in 1 cup chicken stock. Bring the mixture to a simmer, then cover the wok with a lid. Allow it to cook for 8-10 minutes, or until the crab shell turns vibrant red and the crab meat is cooked through.

Uncover the wok. Gently pour the 1 beaten egg into the simmering sauce in a slow, swirling motion to create delicate egg ribbons. Immediately follow by adding the 2 tablespoons cornstarch slurry, stirring continuously until the sauce thickens to your preferred consistency.

Carefully transfer the Chilli Mud Crab to a serving platter. Garnish generously with fresh coriander. Serve hot, traditionally accompanied by mantou (fried buns) or steamed rice.
