Bring a large pot of water to a rolling boil. Add 1 tablespoon of kosher salt. Add the tagliatelle pasta and cook according to package directions until al dente. Before draining, reserve 1 cup of the starchy pasta water.

While the pasta cooks, melt 2 tablespoons of unsalted butter in a large skillet or deep pan over medium heat. Add the minced garlic and sauté for 30 seconds to 1 minute, until fragrant. Be careful not to burn the garlic.

Add the sliced cremini mushrooms to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until the mushrooms have softened and are lightly browned.

Pour the heavy cream into the skillet with the garlic and mushrooms. Bring the mixture to a gentle simmer, stirring occasionally.

Reduce the heat to low. Stir in 1 cup of freshly grated Parmesan cheese until it melts and the sauce begins to thicken slightly. Add the truffle paste (or truffle oil) and mix well to evenly distribute the truffle flavor throughout the sauce.

Season the sauce with 1/2 teaspoon of freshly ground black pepper and additional kosher salt to taste. Remember that the Parmesan cheese and truffle paste are already salty.

Add the cooked and drained pasta directly into the skillet with the cream sauce. Toss gently to coat the pasta evenly.

If the sauce is too thick, add a splash (1/4 to 1/2 cup) of the reserved pasta water, stirring until the desired creamy consistency is reached.

Transfer the creamy truffle pasta to individual serving plates. Garnish generously with fresh chopped parsley and additional freshly grated Parmesan cheese before serving.
