Take the whole winter melon and carefully cut it into manageable sections. A large chef's knife is recommended for this step.

From each cut section, use a spoon or a small knife to scrape out and discard the seeds and the fibrous inner core.

Carefully peel the tough outer skin from each winter melon piece. A sturdy vegetable peeler or a paring knife can be used.

Cut the prepared winter melon into smaller, bite-sized chunks, approximately 1 to 1 1/2 inches in size.

Place the winter melon chunks into a large stockpot or Dutch oven.

Add enough water to the pot to completely cover the winter melon chunks by about 1 inch. Bring the water to a boil over high heat.

Once boiling, add the rock sugar to the pot. Stir gently to help dissolve the sugar. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the winter melon is tender and translucent.

Taste the soup and adjust sweetness if desired by adding more rock sugar. Serve the winter melon soup warm or allow it to cool and serve chilled.
