Return the cooked chicken to the wok with the vegetables.

Add the prepared noodles to the wok.

Pour in all the sauce ingredients: light soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar, white pepper, and chicken powder.

Stir-fry vigorously, tossing all ingredients together to ensure the noodles and vegetables are evenly coated with the sauce. Continue for 2-3 minutes.

Add the bean sprouts to the wok and toss to combine.

In a small bowl, mix the 1 tablespoon of cornstarch with the 1 tablespoon of water to create a smooth slurry. Add this cornstarch slurry to the wok.

Continue to stir-fry for a short period (about 1 minute) until the sauce thickens and coats all the ingredients.

Add the chopped spring onion for freshness and a final flavor boost.

Give everything a final quick stir to incorporate the spring onion.
