While the chickpeas are cooking, cube the 2 1/2 inch thick ribeye steaks into 1/2 inch by 1/2 inch pieces.

Grill the marinated ribeye pieces over medium-high heat until cooked to your desired doneness, about 2-3 minutes per side for medium-rare.

For the dressing, combine 1 tablespoon minced shallots, 1 teaspoon minced garlic, 3/4 cup tahini, 1/2 cup lemon juice, 3 ice cubes, 1/2 tablespoon za'atar seasoning, 1 flat teaspoon salt, 1/2 teaspoon honey, and 1/2 cup ice water in a bowl or blender. Mix well until smooth and creamy.

Taste the dressing and adjust salt if necessary.

In a large salad bowl, combine 2 cups chopped arugula, 1/2 cup chopped red onion, 1 cup diced cucumbers, and 1 cup halved cherry tomatoes.

Add the prepared crispy chickpeas and grilled ribeye to the salad bowl.

Pour the za'atar tahini lemon dressing over the salad ingredients.

Add 1/3 cup chopped parsley to the salad. Mix well to combine all ingredients and coat with the dressing.

Serve immediately and enjoy!
