In a large mixing bowl, combine the all-purpose flour, sugar, salt, and instant yeast. Mix these dry ingredients together thoroughly.

Add the warm milk and the large egg to the dry ingredients. Mix until they are roughly combined and a shaggy dough forms.

Add the melted butter to the dough mixture.

Knead the dough on a lightly floured surface or in a stand mixer with a dough hook until it becomes smooth, elastic, and no longer sticky. This should take about 8-10 minutes.
Place the kneaded dough in a lightly oiled bowl, turn to coat, and cover it with plastic wrap or a clean kitchen towel. Proof the dough in a warm place until it has doubled in size, which takes approximately 1 hour.

Once the dough has proofed, gently punch it down to release the air.

Divide the dough into 12 equal portions. You can use a kitchen scale for accuracy.

Roll each portion into a smooth, tight ball.

Arrange the dough balls in a 23 cm baking pan, leaving a little space between them.

Cover the pan with plastic wrap or a clean kitchen towel and proof the dough again in a warm place until the rolls have doubled in size, which takes approximately 30 minutes.

While the rolls are proofing for the second time, preheat your oven to 180°C. Prepare the egg wash by whisking together the egg yolk and milk in a small bowl.

Once the rolls have proofed, gently brush the tops of the rolls with the prepared egg wash.

Bake the rolls in the preheated oven at 180°C for 20-25 minutes, or until they are golden brown on top.

Immediately after removing the baked dinner rolls from the oven, brush them generously with additional melted butter for a soft and shiny finish.
