Bring a small pot of water to a boil. Add the Maggi noodles (without the masala sachet) and cook according to package directions until tender. Drain the noodles thoroughly and set aside.

In a large pan or skillet, melt the butter over medium heat.

Add the roughly chopped garlic cloves to the melted butter. Sauté, stirring frequently, until the garlic turns golden brown and becomes fragrant, about 2-3 minutes. Be careful not to burn the garlic.

Stir in the chili flakes and 1 tablespoon of fresh coriander. Mix well for about 30 seconds to release their aromas.

Add the Maggi masala sachet and 1/2 cup of water to the pan. Bring the mixture to a gentle simmer and cook for 1 minute, allowing the flavors to meld.

Reduce the heat to low. Add the cheese slices to the pan and stir continuously until they have completely melted and formed a creamy, buttery sauce. Season with a pinch of salt if desired, tasting first as Maggi masala can be salty.

Add the drained Maggi noodles to the pan with the sauce. Toss and mix thoroughly until every strand of noodle is evenly coated with the rich butter garlic cheese sauce.

Serve immediately, garnished with additional fresh coriander and a sprinkle of chili flakes, if desired.
