In a small saucepan, combine the coconut water, granulated sugar, cinnamon sticks, star anise pods, and whole cloves. Bring the mixture to a gentle simmer over medium heat.

Once simmering, reduce the heat to low, cover the saucepan, and let the spices infuse for 5 minutes. Remove from heat and set aside.

While the spices are infusing, add the cream of coconut, coconut milk, evaporated milk, and sweetened condensed milk to a blender.

Add the ground cinnamon and pure vanilla extract to the blender.

Strain the spiced coconut water through a fine-mesh sieve or funnel directly into the blender, discarding the whole spices.

Add the coconut-flavored rum and white rum to the blender.

Blend all ingredients until completely smooth and well combined, about 1-2 minutes. Taste and adjust sweetness or rum content if desired.

Pour the Coquito into glass bottles or a pitcher. Chill thoroughly in the refrigerator for at least 2 hours before serving. Serve cold, garnished with a sprinkle of ground cinnamon or a fresh cinnamon stick.
