While the pasta cooks, season the diced chicken breast with garlic powder, Italian seasoning, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6 to 8 minutes, stirring occasionally, until golden brown and cooked through. Gradually stir in the 8 ounces of freshly shredded Parmesan cheese, one handful at a time, allowing each addition to melt and incorporate before adding more, until the sauce is smooth and creamy. Stir in 1/4 cup of the reserved pasta water. If the sauce is too thick, add more reserved pasta water, 1 tablespoon at a time, until it reaches your desired consistency (up to 1/2 cup total).

Add the cooked chicken and the drained fettuccine back into the skillet with the Alfredo sauce. Toss everything together until the pasta and chicken are thoroughly coated in the creamy sauce.

Taste the pasta and adjust seasoning if needed. Garnish with fresh chopped parsley and extra shredded Parmesan cheese, if desired.
