In a medium bowl, combine the ground chicken, chopped green onion, potato starch, 1 tablespoon of sake, grated ginger, and salt. Mix thoroughly with your hands until the mixture becomes sticky and well combined.

Using your hands, shape the chicken mixture into bite-sized balls. You should get approximately 12-16 meatballs depending on desired size.

In a large pot, combine the 500 ml water, shirodashi, 1 tablespoon of sake, and chicken stock powder. Bring the soup mixture to a rolling boil over medium-high heat.

Carefully add the shaped chicken meatballs to the boiling soup. Reduce the heat slightly to maintain a gentle simmer and cook for 4 minutes, or until the meatballs are cooked through.

Add the cabbage to the pot with the meatballs and continue to cook for another 3 minutes, or until the cabbage is tender-crisp.
Turn off the heat. Stir in the 1 teaspoon of sesame oil into the soup.
