In a large mixing bowl, combine the potato wedges, olive oil, onion powder, garlic powder, smoked paprika, kosher salt, and freshly ground black pepper. Toss thoroughly until all the potato wedges are evenly coated with the oil and seasonings.

Arrange the seasoned potato wedges in a single layer on the prepared baking sheet. Ensure they are not overcrowded, as this allows them to crisp up properly. Use two baking sheets if necessary.

Bake for 30 to 35 minutes, flipping the wedges halfway through, until they are tender on the inside and golden brown and crispy on the outside.

While the potatoes are baking, cook the bacon in a skillet over medium heat until it is crispy. Remove the bacon from the skillet, drain on paper towels, and then crumble it into small pieces.
