Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

Add the chickpeas, peanut butter, honey, vanilla extract, and baking powder to a blender or food processor.

Blend the mixture until it is smooth and well combined, scraping down the sides as needed.

If the dough appears too dry or crumbly, add 1 tablespoon of coconut oil and blend again until the desired consistency is reached.

Transfer the blended mixture to a medium-sized bowl.

Gently fold in the dark chocolate chips until they are evenly distributed throughout the dough.

Scoop spoonfuls of the dough onto the prepared parchment-lined baking sheet. Use your hands to gently press each scoop down into a cookie shape, about 1/2 inch thick.

Bake the cookies in the preheated oven for 12–15 minutes, or until the edges are lightly golden and the cookies are set.
