Cook the whole wheat wonton wrappers according to the package instructions. This usually involves boiling them briefly until tender. Once cooked, drain them thoroughly and set aside.

In a large skillet or frying pan, heat 1 tablespoon of the extra virgin olive oil over medium heat. Add the minced garlic clove and grated ginger, and sauté for 1 minute until fragrant.

Add the 1/2 pound of lean ground lamb (or turkey) to the skillet. Break up the meat with a spoon and cook until it is fully browned, about 5-7 minutes. Drain any excess fat if necessary.

Season the cooked lamb mixture with salt, black pepper, and the 1 tablespoon of lemon juice. Stir well to combine and remove from heat.

Lay out the cooked wonton wrappers. Place a small amount (about 1-2 teaspoons) of the lamb mixture onto each wrapper. Roll each wrapper tightly to form a roll. You can moisten the edges with a little water to seal if needed.

In a small saucepan or microwave-safe bowl, gently warm the remaining 1 tablespoon of extra virgin olive oil with the 1 teaspoon of chili flakes for about 1-2 minutes, just until the oil is fragrant and the chili flakes are slightly toasted. Be careful not to burn the chili flakes.

Arrange the Mediterranean Lamb Wonton Rolls on a serving platter. Drizzle or toss the warmed chili olive oil over the rolls.

Finally, garnish the rolls with the 2 tablespoons of chopped scallions and 1 teaspoon of sesame seeds before serving.
