Rinse the long-grain white rice thoroughly under cold running water until the water runs clear. This removes excess starch and helps prevent the rice from becoming sticky. Drain well.
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds, until fragrant, being careful not to burn it.
Add the rinsed rice to the saucepan and stir to coat it with the oil and garlic. Cook for 1 to 2 minutes, stirring occasionally, until the rice grains are slightly translucent at the edges.
Pour in the vegetable broth and add the salt. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan tightly with a lid, and simmer for 15 minutes.
After 15 minutes, remove the saucepan from the heat, but do not lift the lid. Let the rice steam, undisturbed, for an additional 5 minutes. This allows the rice to finish cooking and absorb any remaining liquid.
Remove the lid and fluff the rice gently with a fork. Stir in the chopped fresh cilantro and freshly squeezed lime juice until evenly combined.
Serve immediately as a flavorful side dish.
