Preheat your oven to 375°F. Lightly grease a round baking dish, about 8-9 inches in diameter, or line with parchment paper.

Unwrap the Camembert cheese. Using a sharp knife, score the top rind of the cheese in a crosshatch pattern, being careful not to cut all the way through to the bottom rind. Place the scored Camembert in the center of the prepared baking dish.

Arrange the sliced pumpkin, apple, and red onion wedges around the Camembert in an attractive, alternating pattern. Tuck the baguette slices in between the vegetables and fruit, or around the outer edge of the dish.

Drizzle the olive oil evenly over the pumpkin, apple, red onion, and baguette. Season everything generously with kosher salt and freshly ground black pepper. Place the fresh thyme sprigs over the vegetables and cheese.

Bake for 20-25 minutes, or until the Camembert is very soft and gooey in the center, and the pumpkin and apple are tender. The baguette should be lightly toasted.

Carefully remove the baking dish from the oven. Drizzle the honey over the warm Camembert and surrounding ingredients. Sprinkle the chopped walnuts over the top.

Serve immediately directly from the baking dish, allowing guests to scoop the warm, melted cheese onto the baguette slices, or with the roasted fruit and vegetables.
