In a large bowl, combine the ground pork, soy sauce, sesame oil, grated garlic, grated ginger, chopped green onions, cornstarch, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

Gradually add the chicken broth to the pork mixture, 1 tablespoon at a time, mixing until the filling becomes juicy and well-moistened. Be careful not to make it too wet.

Lay one dumpling wrapper flat on a clean surface. Place about 1 1/2 to 2 teaspoons of the pork filling in the center of the wrapper. Lightly moisten the edges of the wrapper with a little water using your finger.

Carefully place a second dumpling wrapper directly on top of the first, sandwiching the filling. Press firmly around the edges to seal the two wrappers together, ensuring no air is trapped inside and the filling is completely enclosed.

Heat a large non-stick pan over medium heat and add a small amount of vegetable oil (about 1-2 tablespoons). Once the oil is shimmering, carefully place the assembled dumplings in the pan, ensuring not to overcrowd it. Cook in batches if necessary. Pan fry for 3-4 minutes, or until the bottoms are golden brown and crispy.

Add about 1/4 cup of water to the pan and immediately cover it with a lid. Reduce the heat to medium-low and let the dumplings steam for 5-7 minutes, or until the pork filling is cooked through. The water should mostly evaporate during this time.

Remove the lid and increase the heat to medium-high. Continue to cook for another 2-3 minutes, allowing any remaining water to evaporate and the bottoms of the dumplings to crisp up again. This will give them a delicious crunchy texture.

Transfer the blanket dumplings to a serving platter. Serve hot with optional dipping sauces and garnishes like soy sauce, chili crunch, sesame seeds, and sliced green onions.
