In a small bowl, whisk together the mayonnaise, Dijon mustard, fresh lemon juice, garlic powder, salt, and black pepper until thoroughly combined and smooth. Set aside.

Wash and thoroughly dry the mixed leafy greens. Slice the tomatoes and thinly slice the red onion. If using, prepare the dill pickle slices.

Lay out the 8 slices of rustic bread on a clean work surface. Spread a generous amount of the creamy dressing evenly on one side of each bread slice.

On four of the bread slices (these will be the bottom halves), layer approximately 4 ounces of sliced deli turkey. Top the turkey with about 1/4 cup of shredded sharp cheddar cheese, followed by a handful of mixed leafy greens.

Add several slices of tomato, a few rings of thinly sliced red onion, and dill pickle slices (if desired) on top of the greens on each sandwich.

Place the remaining four bread slices, dressing-side down, on top of the layered ingredients to complete each sandwich. Gently press down to secure the fillings.

For best results and presentation, cut each sandwich in half. If packing for later or serving picnic-style, wrap each sandwich tightly in parchment paper or sandwich wrap.
