Preheat your oven to 300°F. Ensure your lidded ceramic baking dish is ready.

Unwrap the boneless beef chuck roast and place it into the lidded ceramic baking dish. Generously season all sides of the roast with coarse sea salt and freshly ground black pepper.

Cover the baking dish with its lid and carefully place it into the preheated oven. Bake for 3 1/2 hours, or until the roast is incredibly tender and easily shredded.

Carefully remove the baking dish from the oven. Using two forks, shred the tender chuck roast directly in the dish, allowing it to soak up all the flavorful juices.

If serving with mashed potatoes, prepare them while the roast is baking or during the shredding process. Serve the shredded chuck roast hot over a bed of mashed potatoes, garnished with fresh chopped chives.
