Open the can of Cento Sardines in Olive Oil.

Using chopsticks, carefully transfer the sardines from the can into a clear glass bowl.

Pour a tiny bit of the olive oil from the sardine can into the bowl with the sardines. This adds flavor and moisture.

Chop the heirloom tomato into small pieces and add it to the bowl with the sardines.

Chop a handful of fresh cilantro and add it to the bowl.

Chop half of the red onion into small pieces and add it to the bowl.

Cut the three limes in half. Using a lime squeezer, squeeze the juice from all three limes into the bowl. The key to a good ceviche is plenty of fresh lime juice.

Scoop out large chunks of avocado from half an avocado and add them to the bowl.

Using a spoon, thoroughly mix all the ingredients in the bowl until well combined.

Serve the sardine ceviche immediately. Optionally, serve with tortilla chips for scooping.
