Cut the beef chuck roast into 2 inch cubes. Lightly coat the beef cubes with yellow mustard, then generously season with the BBQ seasoning.

Place the seasoned beef cubes on a smoker preheated to 250°F. Smoke until the internal temperature of the beef reaches 165°F. If a smoker is not available, you can bake the beef in an oven at 250°F until it reaches the same internal temperature.

Once the beef reaches 165°F internal temperature, transfer it to a Dutch oven. Add the Hickory Maple BBQ sauce, chipotle adobo sauce, and apple cider to the Dutch oven. Cover the Dutch oven and place it in an oven preheated to 300°F for 2 hours.

Remove the Dutch oven from the oven and allow the beef to cool for at least 30 minutes. Once cooled, carefully drain some of the excess fat from the pot. Shred the beef directly into the remaining sauce in the Dutch oven.

While the beef is cooling, prepare the chipotle mayo by combining the mayonnaise with chipotle sauce to taste. Toast the slider buns until lightly golden.

To assemble the sliders, spread a layer of chipotle mayo on the bottom half of each toasted slider bun. Pile a generous amount of shredded beef onto the bun, followed by a spoonful of the extra sauce from the pot.

Layer a slice of marble cheddar cheese over the beef. Place the assembled bottom buns under a broiler or use a kitchen torch to melt the cheese until bubbly and slightly golden.

Top the melted cheese with crispy onions and pickled jalapeños. Place the top half of the slider buns on top and serve immediately. Enjoy!
