Begin by preparing the shiitake mushrooms. Soak the 4 dried shiitake mushrooms in a bowl of warm water until they are fully rehydrated and soft, which may take about 15-20 minutes. Once soft, remove them from the water (reserving the soaking liquid if desired for extra flavor in other dishes), remove the stems, and slice the mushroom caps.

While the mushrooms are rehydrating, peel and mince the 3 cloves of garlic.

Heat 2 tablespoons of shallot oil in a large pot or deep pan over medium heat.

Add the minced garlic to the heated oil and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the sliced shiitake mushrooms to the pot and continue to sauté for another 2-3 minutes until they become fragrant.

Add the 400 grams of minced meat to the pot. Use a spatula or wooden spoon to break up the meat and brown it evenly. Cook until no pink remains, about 5-7 minutes.

Stir in the 5 tablespoons of fried shallots into the meat mixture.

Add the seasonings: 4 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of cooking wine, 1/4 teaspoon of ground white pepper, and 1/2 teaspoon of five spice powder. Stir well to combine all ingredients.

Add the 15 grams of rock sugar to the mixture, stirring until it begins to dissolve.

Pour in enough water to completely cover the meat mixture in the pan. The exact amount will depend on your pot size, but ensure the meat is fully submerged.

Gently place the 2 hard-boiled eggs into the braising liquid.

Bring the mixture to a boil, then reduce the heat to a low simmer. Cover the pot with a lid and let it simmer for 30 minutes, allowing the flavors to meld and the meat to tenderize.

While the pork is braising, prepare the cabbage soup. In a separate pot, add the chopped cabbage. Pour in enough water to cover the cabbage for the soup. Season with salt and white pepper to taste.

Bring the cabbage soup to a boil, then reduce the heat and simmer until the cabbage is tender, about 10-15 minutes.
Once the 30 minutes are up for the braised pork, it is ready to serve. Serve the braised minced pork and hard-boiled eggs generously over freshly cooked rice. Garnish with additional fried shallots if desired. Serve the hot cabbage soup on the side.
