Preheat your oven to 350°F. Lightly grease a 24-cup muffin tin. Place one wonton wrapper into each cup of the muffin tin, pressing it gently to form a cup shape.

In a large skillet over medium-high heat, brown the 1 pound of ground beef, breaking it up with a meat masher or spoon until finely crumbled. Drain any excess grease. Stir in the 2 tablespoons of taco seasoning until well combined.

Spoon about 1/2 teaspoon of refried beans into the bottom of each wonton cup. Top the beans with a small spoonful of the seasoned ground beef.

Place a second wonton wrapper on top of the first layer of meat and beans in each muffin cup. Add another small spoonful of ground beef on top of the second wonton wrapper.

Generously top each taco bite with the grated cheese.

Bake in the preheated oven for 15 minutes, or until the wonton wrappers are golden and crispy, and the cheese is melted and bubbly.

While the taco bites are baking, prepare your desired toppings. Shred the lettuce, chop the green onions, and have your pico de gallo, black olives, sour cream, and salsa or hot sauce ready.

Remove the taco bites from the oven. Carefully remove them from the muffin tin and arrange on a serving platter. Serve immediately with the prepared toppings for guests to customize.
