Place 1 pound of extra lean ground beef into a pan. Add 1 small diced onion and 1 packet of taco seasoning to the pan. Cook and stir until the beef is fully browned and the onion is softened. Once cooked, drain any excess fat from the pan.

Add 1 cup of drained pinto beans and 1 small can of diced green chilies to the beef mixture. Stir all ingredients together well to combine.

Lay out 8 carb counter tortillas. On each tortilla, spread 1 tablespoon of Bolthouse Farms Fire Chili Ranch. Place approximately 2 ounces of the beef and bean mixture onto one side of each tortilla. Sprinkle 14 grams of shredded reduced-fat fiesta cheese over the beef and bean mixture on each tortilla.

Fold each tortilla in half over the filling, pressing down firmly to create a sealed pocket.

Lightly spray a pan with cooking spray. Place the folded stackers into the pan. Cook the stackers until they are golden brown and crispy on both sides, flipping once during cooking.

Serve the cooked Taco Bell Beef Stackers. Warm 1 cup of nacho cheese sauce and pour approximately 1/8 cup over each stacker. Optionally, drizzle with Taco Bell fire sauce.
