Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Once the dough has rested and risen, gently punch it down to release the air. Transfer the dough to a lightly floured surface and divide it into 4 equal pieces.

Take one piece of dough and roll it out into a rectangular shape, approximately 6x8 inches. Repeat with the remaining dough pieces.

Place one strip of American cheese on one half of a rolled-out dough rectangle, leaving a small border around the edges. Spoon a generous amount of the cooled beef mixture over the cheese.

Place another strip of American cheese on top of the beef mixture.

Fold the other half of the dough over the filling, aligning the edges. Press down firmly around the edges of the dough to seal, then crimp the edges with a fork to create a decorative and secure seal. Transfer the assembled hot pocket to the prepared baking sheet.

Repeat steps 12-14 for the remaining dough and filling.

In a small bowl, whisk together the egg and milk to create an egg wash.

Brush the top of each hot pocket with the egg wash. Sprinkle sesame seeds evenly over the egg-washed hot pockets.

Bake in the preheated oven for 15-20 minutes, or until the hot pockets are golden brown and puffed up.
