In a large bowl, sift together the maida, sugar, cocoa powder, baking powder, baking soda, and salt.

Whisk the dry ingredients until they are well combined.

In a separate small bowl, combine the hot water and coffee, stirring until the coffee dissolves. Add this mixture, along with the mayonnaise, 1/2 cup milk, and oil, to the dry ingredients.

Mix all the ingredients thoroughly until a smooth brownie batter is formed. Be careful not to overmix.

Grease a baking dish and line it with parchment paper. Pour the brownie batter into the prepared dish.

Place the baking dish inside a large pot on a stovetop. Ensure the pot has a tight-fitting lid.

Cover the pot with the lid and cook on a low flame for 45 minutes, or until a toothpick inserted into the center of the brownie comes out clean.

Once baked, carefully remove the brownie from the pot and let it cool slightly.

While the brownie cools, prepare the ganache. In a separate heatproof bowl, melt the 200 grams dark chocolate using a double boiler method.
Once the chocolate is melted and smooth, remove it from the heat and add the 150 ml milk.

Mix the chocolate and milk until a smooth, glossy ganache forms.

Pour the chocolate ganache over the cooled brownie, spreading it evenly across the top.

Allow the ganache to set slightly before cutting the brownies into squares and serving.
