Cut the 200g paneer into small cubes.

Place the paneer cubes in a bowl. Add 1 tablespoon of cornflour, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix thoroughly to coat all the paneer pieces evenly.

Heat 2 tablespoons of oil in a pan. Once the oil is hot, add the coated paneer pieces to the pan. Fry the paneer until it turns golden brown on all sides. Remove the fried paneer from the pan and set aside on a plate.

In the same pan with the remaining oil, add the chopped onion. Sauté the onion until it softens slightly. Add the chopped capsicum and continue to sauté.

Add the chopped ginger, chopped garlic, and chopped green chili to the pan. Sauté all the vegetables and aromatics together for a short period.

Pour in 2 tablespoons of soy sauce, 2 tablespoons of red chili sauce, 1 tablespoon of tomato ketchup, and 1 tablespoon of vinegar. Mix all the sauces and vegetables well in the pan.

In a small separate bowl, combine 1 tablespoon of cornflour with 100ml of water. Mix until there are no lumps and a smooth slurry is formed.

Add the cornflour slurry to the pan with the vegetables and sauces. Mix continuously until the sauce thickens to the desired consistency.

Add the previously fried paneer cubes to the thickened sauce in the pan. Gently toss to ensure all the paneer pieces are coated in the sauce.

Garnish generously with chopped spring onion. The Chilli Paneer is now ready to be served.
