Prepare the gnocchi by ensuring you have 1 pound of potato gnocchi ready for cooking.

Heat a large pan over medium-high heat. Add 2 tablespoons of olive oil and 2 tablespoons of unsalted butter. Once the butter is melted and foaming, add the potato gnocchi in a single layer. Sear until golden brown and crispy on all sides, turning occasionally. Once seared, remove the gnocchi from the pan and set aside.

To the same pan, add the 1 medium finely chopped yellow onion and 5 to 6 minced garlic cloves. Sauté until the onion is softened and translucent, and the garlic is fragrant, about 3-5 minutes.

Add the 3 large ripe tomatoes, cut into halves, to the pan. Stir in 1/2 teaspoon of Italian seasoning, 1 teaspoon of garlic powder, 1/2 teaspoon of paprika powder, and 1/4 teaspoon of red pepper flakes (if using). Season with salt and black pepper, to taste. Cook, stirring occasionally, until the tomatoes have softened and released their juices, and the sauce has thickened slightly, about 5-7 minutes.

Pour in 3/4 cup of heavy cream and stir to combine. Bring the sauce to a gentle simmer.

Add 3/4 cup of freshly grated Parmesan cheese and 1 cup of shredded mozzarella cheese to the sauce. Stir continuously until both cheeses are fully melted and the sauce is smooth and creamy.

Return the seared gnocchi to the pan with the creamy tomato and mozzarella sauce. Toss gently to coat all the gnocchi.

Garnish with fresh basil or parsley, chopped, before serving immediately.
