Prepare the apple: Take the green apple, cut it into several sections, then carefully remove the core from each section. Thinly slice each apple piece and arrange these thin slices, stacked on top of each other, to form a small fan-like bundle. Repeat for each tart.

Assemble the base: On a parchment-lined baking pan, drizzle a small amount of agave or date syrup in four separate spots, sized for each tart. Place one stacked apple fan onto each syrup drizzle. Drizzle a bit more syrup over the apple slices on each spot.

Top with puff pastry: Take a square of puff pastry (which has been pre-cut with a few diagonal slits on top) and gently place it over each apple fan, ensuring the apples are centered beneath the pastry. Press down firmly on the edges of the puff pastry to seal the apples and syrup inside.

Bake the tarts: Place the baking pan in a preheated oven and bake for approximately 12 minutes, or until the pastry is beautifully golden brown, caramelized, and crispy. Keep a close eye to prevent burning.

Serve: Once baked, carefully remove the mini apple tarts from the oven. For an extra treat, serve them warm, optionally topped with a scoop of vanilla ice cream, allowing it to melt slightly over the warm tart, creating an "apple pie" like experience.
