Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.

In a food processor, puree the 1/2 onion until completely smooth. There should be no large chunks remaining.

In a large mixing bowl, combine the block of vegan ground meat, pureed onion, 1 tablespoon of olive oil, and 2 tablespoons of non-dairy yogurt.

Add all the dry spices to the bowl: 1 teaspoon cumin, 1 teaspoon onion powder, 1 teaspoon dried parsley, 1 teaspoon garlic powder, 1 tablespoon nutritional yeast, 1 teaspoon smoked paprika, 1/2 teaspoon red pepper flakes, and 1 teaspoon dried oregano.

Using your hands, thoroughly mix all the ingredients until they are evenly incorporated and form a cohesive, seasoned meat paste. Ensure there are no dry spots.

Divide the vegan meat mixture into 4 equal portions. Take one portion and place it between two sheets of parchment paper. Using a rolling pin, roll the mixture out very thinly into a large, flat sheet, about 1/8-inch thick.

Carefully roll the thin sheet of meat into a tight log shape, still encased in the parchment paper. Repeat this process for the remaining 3 portions of vegan meat mixture.

Place the rolled logs on the prepared baking sheet. Bake in the preheated oven for 30 minutes, or until the logs are firm and slightly browned.

Once baked, remove the logs from the oven. Carefully unroll the parchment paper and slice the cooked vegan meat logs into thin strips. These strips should resemble traditional doner kebab meat.

Heat a large pan or skillet over medium-high heat. Add a small amount of olive oil if desired. Transfer the sliced vegan meat to the hot pan and sear for 3-5 minutes, stirring occasionally, until the edges are crispy and browned.

To assemble the kebabs, warm the pita bread or flatbread according to package instructions. Lay a piece of warm bread flat.

Squeeze a generous amount of vegan herb or garlic sauce onto the bread. Layer a portion of the seared vegan meat slices on top of the sauce.

Add fresh toppings: sliced tomatoes, shredded lettuce, and thinly sliced red onions. Drizzle more herb or garlic sauce over the toppings as desired.

Carefully fold or roll the pita bread to create a doner kebab. Serve immediately and enjoy!
