In a small bowl, combine the low-sodium soy sauce, oyster sauce, honey, cornstarch (if using), and red pepper flakes (if using). Mix well and set aside.

Heat the olive oil in a large skillet or wok over high heat.

Sear the thinly sliced flank steak in a single layer for 2–3 minutes per side until browned. You may need to do this in batches to avoid overcrowding the pan. Season with salt and black pepper to taste.

Remove the seared beef from the pan and set it aside on a plate.

In the same pan, add the fresh green beans and stir-fry for 3–4 minutes until they are tender-crisp.

Add the minced garlic and grated fresh ginger to the pan with the green beans. Cook for 30 seconds until fragrant, being careful not to burn the garlic.

Return the cooked beef to the pan with the green beans, garlic, and ginger. Pour in the prepared sauce mixture.

Toss all ingredients well to coat them evenly with the sauce. Continue to cook for 2–3 minutes, or until the sauce thickens to your desired consistency.

Remove the stir-fry from the heat. Garnish with sesame seeds and sliced green onions before serving.
