Place the 600 grams of beef camto into a large pot.

Add 1 liter of water, 1 medium sliced onion, 6 chopped garlic cloves, 2 sliced ginger pieces, 2 sliced leek stalks, 1 teaspoon of peppercorns, 2 tablespoons of patis, and 1/2 of a Knorr Beef Cube to the pot with the beef.

Bring the mixture to a boil over high heat, then reduce the heat to low and simmer until the beef is very tender. This will take approximately 1.5 to 2 hours.

Once the beef is tender, carefully remove the beef from the broth and set it aside to cool slightly.

Strain the clear broth through a fine-mesh sieve into a separate bowl. This clear broth will be used for the sauce and as 'sabaw' (side broth). Set aside half of the clear broth for the sauce and the other half for serving.

Chop the cooked tender beef into small, bite-sized pieces.

In a separate pan, sauté 1 medium chopped onion over medium heat until softened.

Add 6 chopped garlic cloves to the pan and continue to sauté until fragrant, about 1-2 minutes.

Add the chopped tender beef to the pan with the sautéed aromatics.

Stir in 2 tablespoons of soy sauce, 1 1/2 tablespoons of brown sugar, and 3 pieces of star anise.

Pour in half of the reserved clear broth (from Step 5) and season with pepper to taste.

Simmer the mixture over medium-low heat, stirring occasionally, until the sauce thickens and thoroughly coats the beef pieces, about 10-15 minutes.

Serve a generous portion of the prepared Beef Pares over garlic rice, garnished with extra garlic bits.

Serve the remaining clear broth (sabaw) on the side in a small bowl.

Offer chili oil with calamansi on the side for an optional spicy and tangy kick.
