Fold the sides of the tortilla inward, then roll it tightly from the bottom to form a burrito. Repeat for the remaining tortillas.

Heat a clean pan or griddle over medium-high heat. Place the assembled burritos onto the hot pan and cook until they are golden brown on all sides and the cheese is melted, about 2-3 minutes per side.

While the burritos are browning, prepare the Chipotle Crema. In a small bowl, combine the non-fat Greek yogurt, light mayo, honey, and chipotle peppers in adobo. Mix all ingredients together until the sauce is smooth. Add water, a teaspoon at a time, to thin the crema to your desired consistency.
