Preheat your oven to 350°F. Lightly grease and flour a 9x5 inch loaf pan, or line with parchment paper.

In a large mixing bowl, mash the ripe bananas thoroughly with a fork or potato masher until mostly smooth with a few small lumps remaining.

To the mashed bananas, add the unsweetened plant-based milk, vegetable oil, maple syrup, vanilla extract, and apple cider vinegar. Whisk everything together until well combined.

In a separate medium bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and ground cinnamon until there are no lumps and the dry ingredients are evenly distributed.

Pour the dry ingredients into the wet ingredients. Using a spatula, gently fold until just combined. Be careful not to overmix, as this can lead to a tough bread. A few streaks of flour are okay.

If using, gently fold in the vegan chocolate chips and/or chopped walnuts.

Pour the batter into the prepared loaf pan and spread it evenly.

Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. The top should be golden brown.

Remove the loaf pan from the oven and let the banana bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely. This helps prevent it from breaking apart.
