Roughly chop the apples, leaving the skin and core intact. Slice the orange into rounds.

Combine the chopped apples, sliced orange, cinnamon sticks, whole cloves, allspice berries, and star anise pods in a large, heavy-bottomed pot. Pour enough water over the ingredients to just cover them.

Bring the mixture to a rolling boil over high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 2 hours. The liquid will begin to deepen in color and fragrance.

After 2 hours, use a potato masher or a large spoon to thoroughly mash the softened apples directly in the pot. Continue to simmer the cider, uncovered, for another 30 minutes to allow the flavors to further meld and intensify.

Carefully strain the cider through a fine mesh sieve or a colander lined with cheesecloth into a clean bowl or pitcher. Press down on the solids to extract as much liquid as possible, then discard the solids.

Stir in the brown sugar (or maple syrup/honey) to taste until dissolved. Serve the homemade apple cider warm in mugs. Enjoy the cozy aroma and flavor!
