Preheat your oven to 350°F and grease a mini muffin pan to prevent sticking.

In a mixing bowl, combine the mashed ripe bananas, large egg, melted butter or oil, sugar, and vanilla extract. Mix thoroughly until well combined.

To the wet mixture, add the all-purpose flour, baking soda, and salt. Stir these dry ingredients into the wet mixture gently, mixing only until they are just combined. Be careful not to overmix the batter.

If desired, gently fold in mini chocolate chips or chopped nuts into the batter.

Spoon the prepared batter into the greased mini muffin cups, filling each cup approximately 3/4 full.

Place the muffin pan in the preheated oven and bake for 10-12 minutes. The muffins are done when a toothpick inserted into the center comes out clean.

Once baked, remove the muffins from the oven and let them cool slightly in the pan before transferring them to a wire rack. They can be enjoyed warm or at room temperature.
