Place the rinsed and destemmed green grapes into a tall, clear mixing glass.

Add the peeled and roughly chopped kiwi pieces to the mixing glass with the grapes.

Using a muddler, thoroughly mash and crush the grapes and kiwi together in the glass until a pulpy mixture forms, with visible kiwi seeds.

Squeeze the juice from half a lemon directly into the fruit mixture in the glass.

Pour the honey into the glass with the fruit mixture.

Add a handful of ice cubes to the mixture in the mixing glass.

Carefully transfer the contents of the mixing glass into a cocktail shaker. Secure the lid and shake vigorously for a few seconds to combine and chill the mixture. Pour the shaken mixture back into the original tall mixing glass.

Prepare four serving glasses by adding a few large ice cubes to each.

Divide and pour the shaken green fruit mixture evenly over the ice in the prepared serving glasses, filling each about halfway.

Top off each glass with chilled sparkling water or club soda, creating a fizzy, layered effect.

Give each drink a final gentle stir with a long spoon to combine all ingredients before serving.
