Add the walnuts to a food processor. Pulse until they form coarse crumbs.

Add the soft pitted Medjool dates to the food processor with the walnut crumbs. Process the mixture until it becomes sticky and forms a cohesive ball.

Line a rectangular dish with parchment paper, leaving an overhang on the sides to easily lift the mixture later. Press the sticky date and walnut mixture evenly into the prepared dish.

Chill the pressed mixture in the refrigerator for 20 to 30 minutes to firm up.

Once chilled, use the parchment paper overhang to lift the mixture from the dish. Place it on a cutting board and cut it into individual bars using a sharp knife.

Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. Alternatively, melt over a double boiler.

Dip each bar halfway into the melted dark chocolate, coating one side. Allow any excess chocolate to drip off.

Place the dipped bars back onto the parchment paper. Refrigerate the bars again until the chocolate coating has fully set, about 30 minutes.

Enjoy the finished bars! Store any leftover bars in an airtight container in the refrigerator.
