Crack 2 whole eggs into a bowl. Add 2 tablespoons of milk, a pinch of salt, and a pinch of black pepper. Whisk the mixture thoroughly until light and airy. The more you whisk, the more air you incorporate, leading to a fluffier omelet. Repeat this process for each omelet.

Heat a non-stick pan over medium-low heat. Add 1 tablespoon of butter to the pan. Once the butter melts and starts to foam, pour one portion of the whisked egg mixture into the pan.

Immediately add 1 tablespoon of grated cheddar cheese, 1 tablespoon of grated Parmesan cheese, 1 teaspoon of chopped chives, and 1/2 teaspoon of chopped green chili on top of the eggs.

Cover the pan with a lid and cook for 2 minutes. The omelet should be cooked through and fluffy. While the omelet cooks, toast 2 slices of bread.

After 2 minutes, remove the lid. Carefully fold the cooked omelet in half using a spatula and slide it onto a plate. Repeat steps 2-5 for the remaining omelets.
