Place the beef short ribs in a large bowl and cover with cold water. Let them soak for 30 minutes to help remove excess blood.

After soaking, drain the water and rinse the short ribs thoroughly under cold running water.

In a separate medium bowl, whisk together all the sauce ingredients: soy sauce, brown sugar, sesame oil, minced ginger, minced garlic, and mirin, until well combined.

Place the rinsed beef short ribs into the Instant Pot.

Pour the prepared sauce evenly over the short ribs in the Instant Pot.

Add the chopped carrots, daikon, onion, potatoes, green onions, and shiitake mushrooms to the pot, distributing them around the short ribs.

Pour 1 cup of water into the Instant Pot.

Season the contents of the pot with 1 tablespoon of salt and 1 teaspoon of black pepper.

Gently mix all the ingredients in the pot to ensure the sauce and seasonings are distributed.

Secure the lid on the Instant Pot, ensuring the vent is sealed. Select the 'Pressure Cook' or 'Manual' setting and set the cooking time for 45 minutes on high pressure.

Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes. Do not open the vent during this time.

After 10 minutes of natural pressure release, carefully turn the venting knob to 'Venting' to manually release any remaining pressure. Once the float valve drops, it is safe to open the lid.

Serve the Instant Pot Galbi Jjim hot, ideally with a side of steamed rice, and enjoy!
