Place the bone-in pork chops into the crockpot, arranging them in a single layer if possible.

Season the pork chops generously with garlic powder, black pepper, smoked paprika, and Southern seasoning. Use your hands to rub the seasonings evenly over both sides of the pork chops.

Add the chopped onion, celery, bell pepper, jalapeno, and fresh garlic around and over the seasoned pork chops in the crockpot.

Pour the Worcestershire sauce over the ingredients in the crockpot. Distribute the butter evenly over the top of the pork chops and vegetables.

Sprinkle the au jus gravy mix packets and the Lipton Onion Soup mix packet over all the ingredients in the crockpot.

Pour in the vegetable broth and the warm water. Gently stir the liquids and powdered mixes to combine them, being careful not to dislodge the seasonings from the pork chops too much.

Cover the crockpot with its lid and cook on the low setting for 3 hours.

If using, add the sliced mushrooms to the crockpot after the initial 3 hours of cooking. Stir gently to incorporate them into the liquid.

Re-cover the crockpot and continue to cook on low for an additional 1 hour, or until the pork chops are tender and easily shreddable.

Serve the smothered pork chops hot, ideally over a bed of mashed potatoes, and spoon plenty of the rich gravy from the crockpot over the top.
